Meet Our Chef

Pappagallo Executive Chef, A lifelong passion which started when I was a young boy, perhaps inspired by the Prosecco hills and the rich food culture of the beautiful part of Italy I call home. As a child I spent hours curiously looking around and watching in the kitchen where my parents worked, both cooks, it was here that my passion would grow, I spent my summer holidays helping, learning. As soon as I got the opportunity I left for my first adventure abroad, I started to work for international companies (The Meridian, Hilton, Gstaad Palace and Orient Express ) and starred restaurants  (One Lombard Street in London) wonderful experiences that have helped me grow professionally and personally, as well as fulfilling another of my great passions: travelling! So far my passions have taken me to Australia, Spain, Portugal and back to Italy, where for 11 years I worked for the Cipriani, Venice, one of the most renowned hotels in Italy... And so the journey continues to the Cayman Islands, where I am a Chef at Pappagallo Restaurant, living yet another adventure fuelled by my passions for food and travel.
